And I love the little story he tells about sea cucumber.\n Kimchee, like <a href=\"http:\/\/netnet.net\/~pineaire\/Lutefisk.html\"> lutefisk<\/a> and <a href=\"http:\/\/www.npr.org\/templates\/story\/story.php?storyId=1469413\"> surstr&ouml;mming<\/a>, most likely comes from the days before refrigeration. The acid produced by fermentation preserves (what&#8217;s left of) the food.<\/p>\n<p> Oh, and if you&#8217;re keeping score: <\/p>\n<ul>\n<li>Dried squid: Too salty.
